Whimsy Cookie Company is coming to Knoxville. The custom cookie retailer’s first Knoxville bakery will be located at 4729 Kingston Pike, across from the Bearden Kroger. The Memphis based company began in 2006 and launched franchising opportunities in 2018. There are now 8 locations open and 12 in development. The brand is known for its decorative sugar cookies, chocolate chip buttercream sandwiches, cookies stuffed with Oreo, cookie cakes and eight flavors of butter cookies. Franchisees Kari Summers and Kristi Hawn are very excited about bringing the concept to the Knoxville area. The Knoxville location will also feature J. Brooks Coffee and Shotwell Candy Co. products.
