Kennedy Concepts and Oliver Smith, the developers of Loco Burro and The Kennedy, plan to open a new restaurant at a south Knoxville location in a deal brokered by Oliver Smith of Oliver Smith Realty and Development Company. The new full-service restaurant, Mimosas, will be located one block south of Henley Bridge and on the ground floor of a student housing development and will be marketed towards University of Tennessee students. Mimosas will have brunch offerings and a wood-fired grill menu with late night hours.
